I don't see how you can say Holy Paladins have no one to compete with. If anything, we'd be a heavy contender against the dps caster classes, since both us and them benefit heavily from crit.

And of course, almost every class will be competing for haste/spellpower weapons.

The only things we wouldn't be going after really would be daggers and staves, because obviously we can't use them.

Yeah I highly doubt you'll have much competition on just armor. The only reason I could see really going after caster dps items with crit is if they poorly itemize the spell power plate that drops. So unless bliz wants you guys wearing cloth I highly doubt that will happen.

Except that pallies wear plate and wouldn't have dibs on cloth items....  You're thinking only of a weapon issue I'm assuming.  Several others here are concerned about the entire armor set (think cloth) and all the competition for it.
